Eggs from hens that roam freely, like at Stewart & Sons, are given the opportunity to eat a varied diet of organic feed, seeds, bugs, and vegetation. Free-range chickens also get sunshine and exercise which have been proven to produce eggs that are higher in Calcium, Lutein, Vitamin A, Vitamin E, Choline, Vitamin B2, Vitamin B12 , Folate, and Vitamin D. Eggs are the only food that contains Vitamin D, which is greater in an egg from a healthier pasture-raised chicken. Also, not only do free-range chicken eggs have less saturated fat and cholesterol but they are higher in omega-3 fatty acids which are essential for a healthy heart. When it comes to keeping chickens, the old saying "happy hens lay more eggs" couldn't be more accurate. And yes, happy hens may lay better-quality eggs. Hens that are happy and healthy are more likely to lay more nutritious eggs that are a great source of protein, healthy fats, vitamins, and minerals. In order to remain healthy, a chicken needs exercise, a clean living environment, plenty of fresh water, and a well-balanced diet. The free-range bird gets it all. A hen that is allowed to spend her day roaming the fields and woodlines searching for her next bug or plant is a happy hen.
Before a hen lays an egg, her body creates a protective layer called the "bloom" over the shell. This natural, waxy coating protects the egg’s contents from contaminants. Farm fresh eggs have their bloom, while store-bought eggs no longer do. It is an invisible membrane that seals the egg's porous shell to keep oxygen and bacteria from entering and moisture from leaving. Hens add the bloom during the final hour and a half of egg formation, and it's the last part of the shell to be put on before the egg is laid.
